Organic farming was selected as the most promising alternative. This agricultural system is based on the adoption of biological techniques as composting. This process can be taking either in aerobic and anaerobic conditions added to the use of earthworms or vermicomposting. The process is realizing in mesophilic, thermophilic, cooling and maturation phases. It finishes by the production of compost having enhancements on the physical, chemical and biological properties of soil. Moreover, it stimulates the plant’s growth and enhances the quality of products when used as amendment or substrate. However, these advantageous are impeded unless it presents some criteria related to its maturity and stabilit. .
